Grilled squid with soy and mirin

Ingredients

Quantity Ingredient
60ml japanese soy sauce
60ml mirin
1 tablespoon sugar
300g squid tubes, cut into 5 mm thick rings
4 bamboo skewers, soaked in water for 30 minutes
1 tablespoon oil
ichimi powder, to serve
lemon wedges, to serve

Method

  1. Combine the soy sauce, mirin and sugar in a small bowl. Add the squid and place in the fridge to marinate for at least 30 minutes.
  2. Drain the squid from the marinade and thread three squid rings onto each skewer.
  3. Heat a chargrill pan or barbecue hotplate to high and brush with the oil. Cook the skewers for 2 minutes on each side, or until pale golden.
  4. Sprinkle with the ichimi powder and serve with the lemon wedges on the side.
