Ingredients

250g orechiette
200g broccoli, cut into florets
150g frozen broad beans
150g french beans, cut into 1 cm lengths
2 garlic cloves, thinly sliced
1 onion, thinly sliced
1 lemon, zested and juiced
2 tablespoons olive oil
200ml single cream or cream and milk
1 vegetable stock cube
1 teaspoon rock salt
freshly ground black pepper
750ml water
parmesan, shaved, to serve

Method

  1. Put all the ingredients into a large saucepan in the order listed. Cook for approximately 15 minutes over a medium heat, stirring regularly. About 2 cm of cooking liquid should remain at the end. Serve with grated Parmesan.
