45ml peach puree
1/2 tablespoon strong black assam tea
dry lambrusco, as needed
blackberry, for garnish

Method

  1. In champagne flute, pour peach puree and tea. Do not stir. Gently fill remainder of glass with lambrusco, taking care to preserve the layers. Garnish with a blackberry.
