Ingredients

400ml coconut milk
1 onion, finely sliced
3 spring onions, finely sliced
1 scotch bonnet chilli, deseeded and finely sliced
2 garlic cloves, minced
2 tomatoes, finely chopped
4 mackerel fillets
1 teaspoon sea salt

Method

  1. Bring the coconut milk to the boil in a large saucepan and boil on a medium heat for 20 minutes until reduced by half – the milk will resemble custard at this point.
  2. Add the onion, spring onions, chilli and garlic, then partially cover and cook in the thickened coconut milk for 5–6 minutes until softened. Add the tomatoes and cook for a further minute before adding the mackerel fillets and salt.
  3. Reduce the heat, cover and cook on a low simmer for 5–6 minutes until the mackerel is cooked through. Taste and season with salt as needed, and serve hot.
