Ingredients

2 tablespoons vegetable oil
1 onion, finely sliced
4 spring onions, finely sliced
2 garlic cloves, finely chopped
1 scotch bonnet chilli, deseeded and finely chopped
4 sprigs thyme
1 sweet potato, sliced into 5-mm half moons
2 courgettes, sliced into 1-cm circles
2 ears sweetcorn, kernels only
400ml coconut milk
2 teaspoons sea salt
freshly ground black pepper

Method

  1. Heat the oil in a large saucepan, add the onion, spring onions, garlic, chilli and thyme and stir well, then cover and soften for 10 minutes, stirring occasionally.
  2. Add the sweet potato, courgettes, sweetcorn, coconut milk and salt and stir well. Cover and cook for 20 minutes until the sweet potato is just tender. Taste and season with salt and pepper as needed. Serve with rice or Rice and Peas.
  3. You can use your preferred mix of vegetables in the rundown – okra, carrots, peppers, etc.
