800ml coconut milk
1 x 400g can kidney beans, rinsed and well drained
2 garlic cloves, peeled and left whole
1 onion, finely chopped
1/2 teaspoon ground allspice
1 teaspoon dried thyme
1 teaspoon sea salt
400g long-grain rice, rinsed and well drained

Method

  1. Bring the coconut milk, kidney beans, garlic, onion, allspice, thyme and salt to the boil in a large saucepan with a tight-fitting lid.
  2. Add the rice and stir well. When the coconut milk comes to the boil again, reduce the heat to a very low simmer, then cover and leave for 40 minutes.
  3. After 40 minutes, fluff through the rice, then leave uncovered to steam for 5 minutes.
  4. Serve with any Jamaican curry.
