250g plain flour
1 teaspoon baking powder
1/2 teaspoon sea salt
3 tablespoons vegetable oil

Method

  1. Mix the flour, baking powder and salt together, then add 140ml water. Stir and work with your hands to form a soft dough. Cover and rest at room temperature for 30 minutes.
  2. Divide the dough into 8 pieces and, using your hands, flatten each one into an 8-cm circle. Dip each circle into the oil on both sides, then press them together gently to make a pair. Roll each of the 4 pairs out until very thin and the size of a small dinner plate.
  3. Heat a large heavy-based frying pan on a medium heat, then one by one, fry the roti for 1-2 minutes on each side until golden brown spots appear and the surface stops looking translucent. Remove and keep warm while you cook the remaining roti.
