Ingredients

1 tablespoon olive oil
1 onion, finely sliced
2 garlic cloves, finely chopped
2 teaspoons dried epazote
200g fresh or tinned huitlacoche
1/2 lime, juiced
sea salt
4 warm corn tortillas, to serve
100g queso fresco or feta, crumbled, to serve

Method

  1. Heat the olive oil in a large frying pan and add the onions, garlic and epazote along with a pinch of sea salt. Lower the heat and soften for 10 minutes, stirring occasionally. Add the huitlacoche and stirfry for 5–6 minutes, until cooked through.
  2. Season with the sea salt and lime juice to taste, then pile into the warm tortillas and top with the crumbled cheese. huitla
