Ingredients

400g medium potatoes, peeled, halved and cooked
1 teaspoon ground cumin
1/2 onion, finely chopped
1 jalapeno, finely chopped
4 tortillas
2 tablespoons vegetable oil
sea salt
1/2 red onion, finely chopped
1 avocado, cut into 1-cm cubes
65g cherry tomatoes, quartered then halved
1/2 lime, juiced
10g coriander, roughly chopped

Method

  1. Place the potatoes in a saucepan and cover with cold water. Bring to the boil, then simmer for 25–30 minutes until cooked through. Drain and allow to cool.
  2. Meanwhile, make the guacamole by combining the red onion, avocado, tomatoes, lime juice, coriander and one teaspoon of sea salt in a bowl.
  3. Mash the potatoes with the cumin, onion, 2 teaspoons of sea salt and the jalapeño. Take a quarter of the mixture and spread it over one half of a tortilla, before folding the tortilla in half over the potato filling. Repeat with the remaining tortillas.
  4. Heat a little of the vegetable oil in a large frying pan and, working with two at a time, fry the tortillas for 3 minutes per side on a medium-heat, until crisp and golden-brown. Transfer to a plate lined with kitchen paper, add a little more oil to the pan and repeat with the remaining tortillas.
  5. Serve hot with the guacamole alongside.
