Ingredients

200g plain flour, plus extra to dust
1/2 teaspoon sea salt
1/2 teaspoon baking powder
2 tablespoons olive oil

Method

  1. Mix the flour, sea salt and baking powder together in a large bowl, before adding the olive oil and 100ml water. Work together to form a smooth dough and knead briefly for 3–4 minutes. Place the dough back in the bowl, cover and rest for 10 minutes.
  2. Divide the dough into 8 pieces, and cover. On a floured work surface, roll out each ball into a round. In order to keep them soft don’t roll them too thinly, no larger than 15–17cm.
  3. Heat a large frying pan on a medium heat, and cook each tortilla for 1 minute per side until dark spots appear. Continue until all the tortillas are cooked. If not using immediately, wrap them in foil and warm through in a hot oven for 10 minutes before eating.
