Ingredients

Quantity Ingredient
1 small pineapple
1 small red onion, finely chopped
1 lime, juiced
15g coriander, roughly chopped
1-2 jalapeños, finely chopped
sea salt

Method

  1. Cut the top and bottom from the pineapple, then slice away the peel. Cut into quarters, remove the core, cut each quarter into thirds, then chop roughly into small chunks.
  2. Combine with the red onion, lime juice, coriander and jalapeños. Season with a pinch of sea salt, and serve within a few hours.
