Ingredients

Quantity Ingredient
1 red onion, very finely sliced
1 large lime, juiced
sea salt

Method

  1. Bring a large saucepan of water to the boil and tip in the onion. Simmer for 30 seconds to one minute, then drain well in a colander.
  2. Mix with the lime juice and large pinch of sea salt. Leave to marinate for 45 minutes, stirring once during this time. The onions will now be a luminous pink.
  3. Check the seasoning and add more sea salt as necessary, and serve alongside the cochinita pibil.
