Ingredients

Quantity Ingredient
300g tomatillos, skins removed
1/2 onion, roughly chopped
1 green chilli
20g coriander, roughly chopped
1 garlic clove, peeled
1 teaspoon sea salt

Method

  1. Place the tomatillos in a saucepan of water and simmer for 10 minutes until the tomatillos have softened.
  2. Drain well, reserving a few tablespoons of the cooking liquid, and transfer to a blender along with the onion, chilli, coriander, garlic and sea salt. Blitz until smooth. Season with more salt to taste.
  3. Leave the salsa to cool down to room temperature before serving.
