Home-made advocaat is seriously good. Made from eggs, sugar and brandy, it is rich, creamy and warming, a very different ‘bottle of eggs’ to the commercial variety. Pour it over ice cream, fold through whipped cream, simply serve over ice, or for a taste of Christmas shake up in a snowball.

For the advocaat

9 large egg yolks
225g golden caster sugar
2 vanilla pods, seeds scraped
360ml brandy

For the snowball

50ml advocaat
1/2 lime, juiced
ice cubes
100ml lemonade
grated nutmeg, to dust
maraschino cherry, to serve

Method

  1. To make the advocaat, use a handheld electric beater to mix the egg yolks, sugar and vanilla seeds in a large heatproof bowl for 3 minutes, or until pale, thickened and a trail is left when the beaters are lifted. Gradually add the brandy, beating well.
  2. Place the bowl over a pan of barely simmering water (make sure the bowl does not touch the water) and heat gently for about 5 minutes, stirring constantly with a wooden spoon, until the mixture has thickened further and really coats the back of your spoon. Poor into a jug and leave to cool before storing in a sterilised sealed bottle in the fridge. Shake the bottle before using.
  3. To make the snowball, mix the advocaat, lime juice and a handful of ice in a cocktail shaker. Pour into a highball glass and top up with lemonade. Dust with a little grated nutmeg and pop a maraschino cherry on top to serve.
