Egg white-only cocktails give a silky, foamy texture and a glorious frothy top. Pisco is a grape brandy and best showcased in the Pisco Sour, a favourite of mine and I’m sure soon to be yours.

Ingredients

Quantity Ingredient
100ml pisco
100ml lime juice, (about 5 limes)
50ml sugar syrup
1 large egg white
dash angostura bitters

Method

  1. Measure all the ingredients except the bitters into a cocktail shaker. Shake vigorously for 20 seconds then strain into two glasses. Add 3 drops of bitters into each glass through the foamy top and serve.
