A Rothko-esque vision where eggs are cooked into thick slices of bread and covered with a blanket of Welsh rarebit. Just remember to watch the rarebit toasting under the grill like a hawk.

Ingredients

Quantity Ingredient
2 thick slices country-style bread, (about 2.5 cm thick)
1 egg yolk
2 whole eggs
1 teaspoon english mustard
70g finely grated mature cheddar
1 tablespoon beer
1 teaspoon worcestershire sauce
dash tabasco
15g butter, melted

Method

  1. Preheat the grill to medium-high. Use a 5 cm round cutter (or glass) to cut out a hole in the centre of each slice of bread. To make the rarebit mixture, mix the egg yolk, mustard, cheese, beer, worcestershire sauce and tabasco together in a bowl. Set to one side.
  2. Brush both sides of bread with some of the melted butter. Place a non-stick frying pan over medium heat, add the buttered bread and toast for 10 seconds. Pour a little splash of melted butter into the centre of each ‘hole’ and crack an egg into each. Leave for 1–2 minutes, or until the whites look as though they are about halfway set. Then carefully flip with a fish slice, and cook for another minute or until the white has completely set. Transfer to a baking sheet.
  3. Spread the rarebit mixture onto each of the toasts and place under the grill for 1–2 minutes – keep your eyes on them – until golden, melted and bubbling. Serve straight away – the yolk should still be runny.
