Chopped radish salad, falafel & spiced yogurt

Good-quality ready-made falafel make for such a quick and easy kebab, perfect for a filling lunch or tasty dinner. Once you’re in on the secret, you will never revert to your local takeaway.

Ingredients

Quantity Ingredient
2 x 200g packets ready-made falafel
200g radishes, finely sliced
2 large tomatoes, deseeded and finely chopped
1 baby gem lettuce, shredded

For the spiced yogurt

Quantity Ingredient
1/2 teaspoon cumin seeds
1/2 teaspoon coriander seeds
200g natural yogurt
1 garlic clove, crushed
handful mint, finely chopped
1 teaspoon white wine vinegar
pinch salt

To serve

4 white pitta breads
chilli sauce
natural yogurt

Method

  1. Start by making the spiced yogurt. Heat a frying pan, then add the cumin and coriander seeds. When the seeds start to pop and become fragrant, remove them from the heat and tip into a bowl. Crush in a pestle and mortar if you have one. Add the yogurt, garlic, mint, vinegar, and salt. Stir to combine, then set aside.
  2. Heat the falafel according to packet instructions. Three minutes before the end of cooking, put the pitta breads in the oven to heat through.
  3. Combine the radishes, cucumbers, and tomatoes together in a bowl. Split the pittas along the top edge to form a large pocket, spread with the spiced yogurt, add 3–4 falafels per pitta, stuff in some lettuce, and top with the mixed salad. Serve with chilli sauce and extra yogurt.
