Miso is the ultimate umami food and makes everything taste great. It’s worth keeping a jar in the fridge at all times as it can be brushed over most things to transform them into a tasty treat.

Ingredients

Quantity Ingredient
2 tablespoons miso
1 tablespoon sesame oil, plus a drizzle
1 tablespoon clear honey
1 large aubergine, cut into 3cm

For the pickled carrots

Quantity Ingredient
2 tablespoons rice wine vinegar
1 tablespoon caster sugar
1 large carrot, sliced with a julienne peeler or potato peeler
1 tablespoon toasted sesame seeds
2 spring onions, shredded
boiled rice, to serve

Method

  1. Start by making the pickled carrots. In a bowl, mix the vinegar with the sugar and 1 tablespoon warm water, and stir to dissolve the sugar. Add the carrot, then set aside.
  2. Preheat the grill to high. In a bowl, mix the miso, sesame oil, honey, and 1 tablespoon cold water. Add the aubergine and toss to coat. Thread the aubergine cubes onto 4 small skewers, reserving the marinade. Lightly grease a baking tray with a drizzle of oil, lay the skewers in a single layer, and grill for 20 minutes until soft, sticky, and dark, turning halfway through and brushing with the reserved marinade.
  3. Scatter the skewers with the sesame seeds, and serve with the pickled carrots and spring onions over a bowl of boiled rice.
