Toum is a deliciously creamy garlic sauce that partners perfectly with salty halloumi, fresh herbs, and pretty pink pickled turnips. This kebab looks as good as it tastes.

Ingredients

Quantity Ingredient
2 pickled pink turnips, cut into wedges
1/2 red onion, thinly sliced
250g halloumi
1 large, thick flatbread
or 2 thin flatbreads
handful flat-leaf parsley, roughly chopped
handful cherry tomatoes, roughly chopped
1 lebanese cucumber, cut into batons
salt
freshly ground black pepper

For the toum

Quantity Ingredient
2 garlic cloves, crushed
1/2 lemon, juiced
1 egg white
200ml generous
3/4 cup olive oil

To serve

Quantity Ingredient
2 large pickled chillies
1/2 lemon, cut into wedges

Method

  1. Start by making the toum. Place the garlic, lemon juice and zest, egg white, and oil into a high-sided jar or container. Use a stick blender to combine the ingredients, moving the blender up and down until the ingredients have emulsified – it will take a matter of seconds. Season and add about 2 tablespoons warm water if the toum looks very thick; it should be the consistency of loose mayonnaise. Set aside.
  2. Put the turnips into a bowl with the onion and pour over a little of the pickling juice, toss to coat, and leave to stand.
  3. Meanwhile, heat a griddle pan to high. Cut the halloumi into 8 slices and cook for 1–2 minutes on each side, or until softened and golden brown.
  4. Spread the flatbread(s) with 1–2 tablespoons of the toum, followed by the parsley, halloumi, cherry tomatoes, cucumber, and finally the pickled turnips and onion. Serve with a pickled chilli and lemon wedge for squeezing.
  5. Any leftover toum can be stored in an airtight container in the fridge for up to 2 days.
