Plain harissa is a Moroccan spice paste of astonishing hotness. As part of a dressing, it has a chance to show off its warmth and fragrance. Halloumi, which can sometimes seem uninspiringly plain, just begs to be dressed this way.

Ingredients

Quantity Ingredient
1 1/2 teaspoons harissa, (use rose harissa if you can find it)
1 garlic clove, crushed
1/2 lemon, zested and juiced
2 teaspoons honey
2 tablespoons extra virgin olive oil
1 heaped tablespoon pumpkin seeds
4 slices seeded bread
250g halloumi
4 handfuls salad leaves
salt
freshly ground black pepper

Method

  1. To make the dressing, put the harissa, garlic, lemon zest and juice, honey and oil in a jam jar, season, pop on the lid and shake for 30 seconds.
  2. Heat a frying pan over a medium-high heat. Tip the pumpkin seeds into the pan and toast until they begin to pop, shaking the pan every so often. Transfer to a bowl and set aside. Toast the bread.
  3. Return the frying pan to a medium heat. Cut the halloumi into 8 or 12 slices, then place in the hot pan and cook for 1 –2 minutes on each side, or until softened and golden brown.
  4. Top the slices of toast with a little of the dressing, the salad leaves and the warm halloumi slices. Drizzle over some more of the dressing and scatter over the pumpkin seeds.
  5. Any remaining dressing can be stored in the fridge for up to a week.
