There’s a tradition of serving open sandwiches that spread across Scandinavia, and these elegant little canapés are topped with a Swedish-inspired combination of prawn and dill.

Ingredients

Quantity Ingredient
9 small slices pumpernickel bread, halved
2 tablespoons olive oil
2 tablespoons soured cream
3 1/2 tablespoons mayonnaise
1/2 red onion, finely chopped
good squeeze lemon juice
few dashes tabasco
small handful dill, finely chopped
250g cooked prawns, (shrimp)
25g salmon caviar
salt
freshly ground black pepper

Method

  1. Preheat the oven to 160°C fan. Brush both sides of each slice of bread with the oil, place on a baking tray and bake for 5 –10 minutes, or until crisp. Remove and leave to cool.
  2. Mix the soured cream, mayonnaise, onion, lemon juice, Tabasco and most of the dill in a bowl. Taste and season, then stir through the prawns.
  3. Top the cooled toast slices with the prawn mixture and the remaining chopped dill, then finish with a spoonful of salmon caviar.
