Anyone who’s been skiing will recall the stomach-stretching excesses of the giant cheese fondue into which cubes of bread are dipped. The posh way to do this is to reverse the process. Smear the fondue on the toast and grill to bubbling perfection.

Ingredients

Quantity Ingredient
140g comte, finely grated
140g gruyere, finely grated
140g full-fat cream cheese
3-4 tablespoons white wine
1 tablespoon cornflour, (cornstarch)
freshly grated nutmeg
6 slices granary bread
bunch radishes with their leaves
salt
freshly ground black pepper

Method

  1. Place the cheeses, wine, cornflour, a little nutmeg and some seasoning into the bowl of a food processor and whizz together. Taste and add more wine if needed.
  2. Heat the grill and lightly toast the bread. Turn the grill down to its lowest setting. Spread the cheese mixture thickly over each slice of toast, then pop under the grill and let it gently melt and bubble for about 10 minutes. (Keep the grill on low as you want the cheese to melt slowly.) In the final minute of cooking, increase the heat to brown the top. Serve with crunchy radishes and their leaves.
