The Cooked books we want for Christmas

The cooked.com.au team shares the books they want for Christmas, as well as the recipes they're planning on making over the holidays.

Book: Vegetables by Antonio Carluccio

Short of having Antonio Carluccio, the godfather of Italian cooking, as my actual grandfather, his latest cookbook Vegetables would be next on my wish list. A hardcover compendium complemented by cute illustrations, it’s the kind of book I know I’ll end up covering in oily fingerprints and flour. In addition to my family Christmas, this year I’m hosting a lunch with 20-odd friends and I have my eye on the beetroot lasagne, Swiss chard and artichoke tart, and baked courgette with cheese for the mains. I’m also going to make the fragrant mixed herb and flatbread salad from The Saffron Tales, and the farro, Persian feta and almond salad from Alimentari.

Book: Alimentari by Paul and Linda Jones

My top Christmas book is Alimentari. Its fresh, punchy salads are the perfect sides for the Christmas Day table, and are a lighter alternative to roast vegetables or stock-standard leafy greens. Making salads for Chrissie also means less time with the oven on (a blessing if, in true Australian fashion, the mercury skyrockets), and many can be prepped in advance. The raw vegetable salad with honey dressing and the blood orange and fennel offering are my picks. Alimentari’s divinely decadent peanut butter and chocolate brownies will also be making an appearance in my kitchen during the holidays – after I’ve recovered from the indulgence of Christmas Day (and Boxing Day), of course!

Book: Gather by Gill Meller

This year we’ll be in the beautiful town of Bath, UK, with my stepdaughter and her partner, hopefully celebrating a white Christmas. I’ll be cooking an abundant English feast with all the trimmings, and will be looking to in-season, regional produce to help make it a meal to remember. My go-to recipes will be those from Gather by Gill Meller. I can’t wait to try his grilled scallops with green peppercorns and garlic, roast partridge with red cabbage, celeriac and raisins, and it would be wrong not to have a reminder of home with a pavlova-like dessert of blackberry and apple meringue with walnuts. We’ll be washing down the feast with plenty of Perrier Jouet Champagne – yum!!

Book: Lamingtons & Lemon Tart by Darren Purchese

My quest at Christmas is to make the perfect homemade sweet treat to gift to friends and to enjoy with family at the end of our festive feast. I have my go-to rocky road recipe that I’ve been told not to mess with, but this year I’m also trying Darren Purchese’s honeycomb from Lamingtons & Lemon Tart.

Book: Simple Cooking by Antonio Carluccio

Typically being a very hot Christmas in my home city of Perth, there will definitely be some local riesling in the ice bucket for my family to enjoy while I’m whipping up a twist on what can be a basic barbecue dish. The Banks family loves the good ol’ lamb chop, so I plan to cook Antonio Carluccio’s stuffed version at this year’s Christmas lunch. The stuffing adds a little somethin’ somethin’ to what we already love about lamb cutlets, and I’ll tweak the recipe slightly by stuffing half with a mix of Danish feta, lemon zest and thyme – just to keep things interesting. We’ll be washing these super-juicy lamb cutlets down with a couple of bottles of sparkling shiraz.
