In China, variations of marinated cucumber are often served at the start of a meal. I don’t usually enjoy marinated food straight from the refrigerator, but this is an exception with the chill of the refrigerator enhancing the crunch of the cucumber.

Ingredients

Quantity Ingredient
1 bunch french breakfast or red radishes
6 baby cucumbers, sliced into 1 cm discs
1/2 teaspoon salt
1/2 teaspoon sugar

Dressing

Quantity Ingredient
5 garlic cloves, finely chopped
2 teaspoons finely chopped fresh ginger
2 1/2 tablespoons light soy sauce
2 tablespoons sesame oil
1 teaspoon sugar
chinese chilli oil, (optional)

Method

  1. To make the dressing, soak the garlic and ginger together in water for 5 minutes. Strain and place in fresh water for another 5 minutes. Repeat this process twice more then strain and dry on paper towel. When dry, mix with the soy sauce, sesame oil and sugar. If chilli is your thing, add a good splash of chilli oil to the dressing.
  2. Halve the radishes if they are small or quarter them if they are large.
  3. Put the radishes and cucumbers in a bowl and mix through the salt and sugar. Transfer to a colander set over a bowl to drain in the refrigerator for 30 minutes. Pat the vegetables dry and toss them in the dressing.
  4. Place in the refrigerator for an hour before serving.
