Ingredients

Quantity Ingredient
500g fresh shiitake mushrooms, stems removed
125ml rice wine vinegar
110g sugar
125ml light soy sauce
1 tablespoon thinly sliced fresh ginger

Method

  1. Bring a saucepan of salted water to the boil. Add the mushrooms to the boiling water and cook for 1 minute, using a small sieve or kitchen spoon to hold them under the water. Drain the mushrooms and set aside.
  2. Put the vinegar, sugar, soy sauce, 250 ml water and the ginger in a small saucepan over medium heat and cook until the sugar has dissolved, taking care not to let it boil.
  3. Remove the pan from the heat and pour the liquid over the mushrooms. Leave to pickle for at least 2 hours before using. Drain the liquid before serving. These keep nicely in the refrigerator for up to a week.
