Ingredients

Quantity Ingredient
250g apples, cored and roughly chopped
100g dried apricots, roughly chopped
100g prunes, stoned and roughly chopped
100g raisins
100g pistachios, shelled and roughly chopped
1/2 teaspoon saffron threads
cold water

To serve

clear runny honey
cinnamon

Method

  1. For the stewed fruits, place the apple, dried fruits, pistachios and saffron threads in a large saucepan. Add about 200ml cold water and simmer over a low heat. Stir occasionally and add a little extra water if the mixture is too dry. Simmer for about 20–30 minutes or until the fruit is cooked and the mixture thickens to a soft and sticky consistency.   2. To assemble, spoon the stewed fruits over the couscous. Drizzle with clear runny honey, dust with cinnamon and serve.
