Ingredients

Quantity Ingredient
6 tablespoons extra-virgin olive oil
1 lemon, juiced
6 garlic cloves
1 teaspoon paprika
12 large prawns
rocket salad
arab-style flatbread

Method

  1. Combine 6 tablespoons extra-virgin olive oil, juice of 1 lemon, 6 garlic cloves, chopped, and 1 teaspoon paprika in a bowl. Add 12 large prawns, heads removed but shells left on, and mix well. Cover with cling film and marinate in the refrigerator for 1 – 2 hours.
  2. Meanwhile, get four metal skewers or four wooden skewers (soaked in water to stop them from burning during cooking). Remove the marinated prawns from the refrigerator and thread three prawns onto each skewer. Reserve the marinade. Grill the prawns or cook in a cast iron griddle pan over a medium heat, turning once, for about 6–7 minutes or until cooked.
  3. Transfer the prawns to a platter and drizzle with remaining marinade. Serve with rocket salad and Arab-style flatbread.
