A really lovely, fragrant and delicate lassi, delicious at any time of the day and with any Indian meal.

Ingredients

Quantity Ingredient
600g yogurt
500ml semi-skimmed milk
24 blanched almonds
1-1 1/2 teaspoons ground cardamom
1/2-1 1/2 teaspoons rose water, or to taste
4-5 tablespoons caster sugar, or to taste
handful ice, crushed
organic rose petals, (optional)

Method

  1. Blend the yogurt, milk, almonds, cardamom, rose water and sugar together until smooth. (You may need to do this in two batches, to avoid overloading the blender and splattering the kitchen.)
  2. Put the ice and rose petals, if using, into glasses, then pour in the lassi and serve.
