Cinnamon chipotle salsa

A savoury Mexican salsa with tomatoes, dried smoked chipotle (the best option) and a touch of cinnamon.

Ingredients

Quantity Ingredient
1/2-1 chipotle or other smoked chilli
400g tinned crushed or chopped tomatoes
or 6 medium fresh tomatoes, chopped
1 teaspoon tomato paste
1/4 teaspoon ground cinnamon, or to taste
1 tablespoon caster sugar
1/2 teaspoon salt

Method

  1. Begin by slowly roasting the chilli in a dry frying pan over low heat just until it softens. If necessary, add a few drops of water.
  2. Transfer to a chopping board and roughly chop the chilli. Return to the pan, and add all the other ingredients. Bring to the boil and gently simmer for 4-5 minutes, then cool slightly. Next, mix in a food processor until more or less smooth. Season to taste. Serve with fajitas, barbecued chicken, tacos, burritos or other Mexican food.
