Angel’s hair pasta with truffle sauce

Ingredients

Quantity Ingredient
300g dried capelli d’angelo pasta
salt and pepper, to taste
60g parmesan, freshly grated

Truffle sauce

Quantity Ingredient
80g unsalted butter, roughly chopped
1 teaspoon truffle oil
a few shavings of black truffle, (optional)

Method

  1. Cook the pasta in plenty of boiling salted water, stirring well at the start to break up the little pasta nests, for 5–6 minutes or until al dente.
  2. Meanwhile, for the sauce, put the butter in a pan and melt it. Add a tsp truffle oil. Stir well, then add about 3 tbsp cooking water from the pasta, to give a bit of additional moisture.
  3. Lift the pasta from the water with pasta tongs, add it to the butter, season with salt and pepper and most of the Parmesan. Mix well, adding the truffle shavings if liked, and serve sprinkled with the remaining Parmesan.
