Lime, melon and mint ice lolly

Use a green-fleshed melon for this if you can, to help preserve the green colour. This is one that you can happily add alcohol to – try a couple of tablespoons of rum or tequila – or have a little bowl of it to hand for dipping when you eat it.

Ingredients

Quantity Ingredient
a small bunch mint, leaves only
1 lime, pared zest
75ml lime juice
250ml double cream or coconut milk, plus 1 tablespoon
250g melon, prepared weight
100g granulated sugar

Method

  1. Put the mint leaves and lime zest in a bowl and muddle them as much as possible to bruise the mint and release oils from the zest. Put the cream or coconut milk in a small saucepan and heat gently until almost boiling. Remove from the heat and add the mint leaves and lime zest. Leave to infuse for as long as you can – at least until the liquid is completely cool – then strain into a blender. Add the melon, lime juice and sugar and blitz until smooth, then push through a sieve into a clean jug.
  2. Pour into your ice lolly moulds and freeze until solid.
