Crispy togarashi salmon skins

This is a great way to use up fish skins that would otherwise be discarded. Serve in shards as a topping for poke, or as a salty, crunchy snack.

Ingredients

Quantity Ingredient
4 fillets, scraped clean of flesh and blotted dry
sea salt, for sprinkling
togarashi powder, for sprinkling

Method

  1. Preheat the oven to 180°C. Line a baking tray with baking paper, lay out the skins on top and sandwich with another sheet of baking paper. Weigh down the skins by placing another baking tray on top before transferring to the oven. Bake for 20 minutes until crispy, then sprinkle with salt and togarashi and cut lengthways into pieces.
