Quick-cooked beef and vegetables

Ingredients

Quantity Ingredient
1kg scotch fillet, in one piece
60g cellophane noodles or shirataki noodles
beef suet or vegetable oil, for cooking
12 spring onions, cut into short lengths
225g winter bamboo shoots, rinsed, drained and thinly sliced
500g fresh mushrooms, halved or quartered if large
2 onions, cut into eighths
230g fresh bean sprouts, trimmed
1/2 small head chinese cabbage, chopped
shoyu, to taste
sugar, to taste
sake, to taste
beef stock, for cooking
6 pieces pressed tofu, grilled, (optional)
6 eggs, (optional)

Method

  1. Partially freeze the beef then cut into paper-thin slices. Cook the noodles in a saucepan of boiling water until tender, then drain well and cut into short lengths. Set aside.
  2. Heat the suet or vegetable oil in a large heavy-based frying pan over high heat. Add half of the spring onion, bamboo shoot, mushroom, onion, bean sprouts and cabbage to the pan and stir-fry for 1–2 minutes until just tender.
  3. Push the vegetables to one side of the pan and add the meat in one layer. When cooked on one side turn and cook the other side. Sprinkle with shoyu, sugar and sake, to taste, then add a little stock to moisten all the meat and vegetables. Add the noodles and tofu, if using, and heat through. If using shirataki noodles, do not place beside the beef as they are said to toughen the meat.
  4. Serve immediately straight from the pan. Traditionally, each diner breaks an egg into a bowl, beats it lightly with chopsticks, then dips the hot food into it before eating. Cook the remaining vegetables only after the first batch has been eaten. Serve with white rice.
