These are just epic! I am very possibly addicted to sushi and one of my favourites is the California roll, with its combination of salmon and avocado. This is a great way to recreate the sushi flavour experience without having to get all creative with the bamboo mats. When buying fish to make your own sashimi, please ensure that it is fresh and from the fish counter. Ask the fishmonger to skin it, too, and triple-check the freshness if need be.

Ingredients

Quantity Ingredient
1 small very ripe avocado
1 teaspoon wasabi paste
2-3 teaspoons soy sauce
1 salmon fillet, skinned by the fishmonger
1 slice sourdough bread

Method

  1. Scoop the flesh from the avocado into a bowl. Add the wasabi and soy sauce and mash, ensuring an even mixture.
  2. Slice the salmon fillet into thin (½–1 cm) slices.
  3. Toast the sourdough bread. Top with the avocado mixture. Lay the salmon slices on top and serve.
