A lovely rich chocolatey dessert, with a secret ingredient.

Ingredients

Quantity Ingredient
2 very ripe avocados, (make sure they are soft to the touch)
3 tablespoons cocoa powder
3-4 teaspoons honey
1 tablespoon coconut oil
6 oat cakes

Method

  1. Scoop the flesh of the avocados into a blender or food processor. Add the cocoa powder and honey. Place the coconut oil in a heatproof bowl, then sit the bowl in some freshly boiled water. In a matter of seconds the oil will melt. Add the melted oil to the food processor. Process into a smooth chocolate mousse-like mixture.
  2. Crumble the oat cakes and divide between two glass tumblers. Spoon the chocolate mixture over the top. Place in the fridge and chill for two or three hours.
