Blueberry & goat’s cheese with lemon thyme butter

If you love a bit of goat’s cheese, then give this toastie a try! Slightly sour with bursts of blackberry and a sweet drizzle of honey, all toasted between lemon thyme butter.

Ingredients

Quantity Ingredient
1/2 tablespoon lemon thyme leaves
1 tablespoon butter, at room temperature, pinch of sea salt
2 slices multiseed bread
50g soft goat’s cheese
50g blueberries
1 tablespoon clear honey

Method

  1. Mix the lemon thyme in a small bowl with the butter and a pinch of salt, and set aside.
  2. Spread the lemon thyme butter on one side of both slices of bread, then lay one slice butter-side down. Cover it with the goat’s cheese, scatter over the blueberries and drizzle with honey. Top with the other slice of bread, butter-side up.
  3. Heat a frying pan over a medium heat, then lay the sandwich in the pan. Fry for 3 minutes, then flip it over and cook the other side for 2–3 minutes or until golden brown. Alternatively, cook the sandwich in a toasted sandwich maker or a panini press. Transfer the sandwich to a plate, slice in half and serve.
