Italian ricotta is a great mild cheese and works well in this melt with the bitterness of the marmalade. Don’t leave out the lime butter – it gives the toastie that extra punch.

Ingredients

Quantity Ingredient
1/2 lime, zest
2 tablespoons butter, at room temperature
4 slices white bloomer
225g ricotta
115g orange marmalade
1 tablespoon chopped hazelnuts, toasted, plus extra to serve

Method

  1. Mix the lime zest with the butter in a small bowl.
  2. Spread the lime butter over one side of each slice of bread, then lay 2 of the slices butter-side down. Spread them with the ricotta, then spoon on the marmalade. Top with the hazelnuts (if using) and the remaining slices of bread, butter-side up. Gently press down on the sandwiches to secure the filling.
  3. Heat a griddle pan to a medium heat and lay the sandwiches in the pan. Griddle for about 3 minutes, then turn the sandwiches over and cook for around 3 minutes more until the filling is warm and the toast is golden. You can also cook the sandwiches in a toasted sandwich maker or a panini press.
  4. Cut in two and serve. Garnish with toasted hazelnuts, if desired.
