‘Boom boom pow’ is a popular song by the black-eyed peas, and I think it’s a good name for this dish. Black-eyed peas – or black-eyed beans – are a source of protein, calcium, folate and vitamin a, but you don’t need to cook this just because it is healthy. Aromatic with cumin and cinnamon, it is also delicious. It can be served as part of an Indian banquet or on its own.


Quantity Ingredient
200g dried black-eyed beans, soaked overnight
1 bay leaf
3 tablespoons olive oil
1 tablespoon cumin seeds
1 cinnamon stick
3 medium onions, finely chopped
4 garlic cloves, crushed
400g button mushrooms, sliced
800 g tin of diced tomatoes
3 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon ground turmeric
1 teaspoon ground cinnamon
1 teaspoon cayenne pepper
1/4 cup coriander leaves
sea salt
freshly ground black pepper


  1. Drain the beans and put them in a saucepan with the bay leaf. Cover with fresh water and bring to the boil, then reduce the heat to a simmer and cook for 20–25 minutes, until the beans are tender. Drain the beans and remove the bay leaf.
  2. While the beans are cooking, heat the oil in a large heavy-based saucepan and add the cumin seeds and cinnamon stick. Fry for 1 minute, until the cumin seeds begin to pop. Add the onion and garlic and fry for 2–3 minutes, until starting to brown. Add the mushrooms and fry for another 2–3 minutes, then add the tomato and ground spices. Cover with a lid and simmer for 10 minutes.
  3. Stir in the beans and coriander leaves and season with salt and pepper, then cook for another 30 minutes.
