Mango, banana and blueberry ice lollies

These are so pretty and can be made in a flash. They’re great for those hot days when you need something refreshing that’s also jam-packed with goodness. This goodness comes not only from the fruit, but also from the spinach and chia seeds that I’ve added… and no one will ever know!

Ingredients

Quantity Ingredient
2 bananas
2 mangoes, peeled, pitted and chopped
handful spinach
190g blueberries
360ml coconut milk
80g chia seeds
8 ice-lolly moulds, (and sticks, if needed)

Method

  1. Put all the ingredients in a blender or food processor and mix until smooth.
  2. Pour the mixture into the ice-lolly moulds. If your moulds didn’t come with sticks, push your sticks in, then freeze for 3–4 hours and enjoy!

Note

  • Mango may just be the king of fruits as it’s packed with loads of antioxidants and super-high in Vitamins C and A.
