Ingredients

Quantity Ingredient
6 slightly underripe pears
1 vanilla pod, split in half and seeds scraped out
2 cinnamon sticks
2 cloves
4 cardamom pods
1 star anise
4 slices peeled fresh ginger
1 orange, cut into slices
pistachios, finely chopped, to decorate

Method

  1. Place the peeled pears, vanilla pod, spices, ginger and orange slices into a large heavy-based saucepan, then pour in enough filtered water to just cover the pears. Cover the saucepan with a lid and bring to a low simmer. Simmer until the pears are tender. This will depend on how ripe the pears are but generally takes between 30–60 minutes.
  2. Serve with coconut yoghurt or with Chocolate Beetroot Cake sprinkled with chopped pistachios.
