This effortless soft butter icing is suitable for filling and topping all kinds of cakes.

Ingredients

Quantity Ingredient
125g butter, softened
200g icing sugar
a few drops vanilla extract

Method

  1. Put the butter into a medium bowl and, using a hand-held electric whisk, cream until light and fluffy.
  2. Sift in the icing sugar and add the vanilla extract. Whisk again for 5–7 minutes, or until the icing is light and fluffy.

Variations

  • Coffee butter icing Replace the vanilla extract with 3 tsp finely ground strong espresso coffee (powder fine).

    Chocolate butter icing Mix 2 tbsp sifted cocoa powder with just enough boiling water to make a paste and allow to cool. Mix with the butter before adding the icing sugar and vanilla.
