Method

  1. Melt 75 g white chocolate in a bowl over a pan of boiling water then let it cool for at least 10 minutes. This must not be hot when you make the buttercream. Add 300 g sifted icing sugar, 200 g butter (at room temperature), a few drops of pink food colouring and 15 g rose water. Beat until light and fluffy.
