Western mushroom recipes sometimes taste heavy, as they absorb a lot of oil. This raw, no-oil salad is much lighter, but has a gorgeously dense bite to it.

Ingredients

Quantity Ingredient
4 shiitake mushrooms
2 enoki mushrooms
2 oyster mushrooms
4 closed cup mushrooms
1/2 teaspoon sea salt

Method

  1. Cut the hard part of the stems from the shiitake mushrooms, then trim and finely slice all the mushrooms and sprinkle with sea salt.
  2. Lay them all next to each other on a grill pan and cook under a hot grill for 5 minutes, turning to cook all sides.
  3. Eat them as they are, or with wasabi dressing.

  • 15 kcal in total, without dressing; 7.5 kcal per serving, without dressing.
