Simple to prepare, but very impressive!

Stuffed green peppers with turkey

Ingredients

Quantity Ingredient
120g onion, finely chopped
1 teaspoon cooking oil, for the onion, plus 1 tablespoon for the peppers
480g minced turkey
salt, to taste
1 egg, beaten
4 small green peppers
4 teaspoons plain flour
4 tablespoons balsamic vinegar
2 tablespoons mirin

Method

  1. Cook the onion over a medium heat with the 1 teaspoon of oil until soft. Tip into a bowl. Add the turkey, salt and egg and mix well. Leave for 20 minutes.
  2. Cut each pepper in half and remove the seeds and ribs. Fill each half with the turkey mixture, and sprinkle the turkey with the flour.
  3. Add the 1 tablespoon of oil to a frying pan over a medium heat. Add the peppers, turkey-side down. Cook for 3 minutes. Turn and cook for another 3 minutes.
  4. Add the balsamic vinegar and mirin, cover and cook for a final 5 minutes, or until the pepper has softened and the stuffing is cooked through. Serve, or divide into 4 portions, wrap and freeze separately. Use 1 portion for a bento box.

Onigiri

Ingredients

400g Perfect sushi rice, hot
salt
4 thick strips nori seaweed

Method

  1. Take one-quarter of the rice and mould it into a ball in your hands.
  2. Sprinkle salt all over the rice and pat it in firmly, then wrap the seaweed around the rice and it’s ready to eat! Repeat to use all the rice and seaweed. If making in advance, wrap and freeze each onigiri separately. Use 1 onigiri in a bento box.

Grilled pumpkin

Ingredients

240g green-skinned pumpkin
salt

Method

  1. Cut the pumpkin into 5 mm-thick slices. Lay them on a grill pan and cook under a hot grill for 5 minutes, turning to cook both sides. You should get speckles of black.
  2. Sprinkle salt all over the pumpkin. Serve, or divide into 4 portions, wrap and freeze separately. Use 1 portion for a bento box.

  1. Add 3 fresh cherry tomatoes to each bento box.

    Onigiri makes 4 bento box portions: 683 kcal in total; 171 kcal per serving.

    Grilled pumpkin makes 4 bento box portions: 116 kcal in total; 29 kcal per serving.

    Fresh tomatoes: 14 kcal per serving.
