This is a simple banana bread, heavy, moist and dark.

Ingredients

Quantity Ingredient
3 ripe bananas, well mashed
2 eggs, well beaten
300g plain flour
165g sugar
1 teaspoon salt
1 teaspoon bicarbonate of soda
60g walnuts, coarsely chopped

Method

  1. Mix bananas and eggs together in a large bowl. Sift in flour, sugar, salt and bicarbonate of soda. Add walnuts and blend. Put batter in greased 21 × 11 cm loaf tin and bake in a preheated moderate oven for 1 hour. Remove from pan to a wire rack. Serve still warm or cooled, as you like, with butter.
