Beetroot in sour cream, a Russian dish. Delicious with boiled meats or chicken.

Ingredients

Quantity Ingredient
6 fresh beetroot, cooked and peeled
375g sour cream
15g butter
salt and freshly ground black pepper
cayenne

Method

  1. Mash or grate beetroot (this can be done in a food processor). Gently heat sour cream with butter, salt, pepper and a dash of cayenne. Beat sauce until it is light and creamy, and mix with beetroot.
