Fish curry with tomato

Ingredients

500g fish steaks
2 tablespoons ghee or butter
1 onion, finely chopped
2 garlic cloves, crushed
2 tablespoons fresh mint or coriander, chopped
1 teaspoon ground cumin
1 teaspoon ground turmeric
1/2 teaspoon chilli power
1 tomato, chopped
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 lemon, juiced

Method

  1. Cut fish into serving pieces. Heat ghee or butter in a heavy saucepan and fry onion and garlic over low heat until translucent. Mix in mint or coriander, cumin, turmeric and chilli powder, and stir for 2 minutes.
  2. Add tomato, salt and pepper, and cook until tomato becomes soft and pulpy. Add lemon juice and fish pieces, and spoon sauce over fish.
  3. Cover pan and simmer gently for 10 minutes or until fish flakes easily when tested with a fine skewer. Serve with boiled rice and lemon wedges.
