Ingredients

3-4 slices tinned pineapple
6-8 glace cherries

Butterscotch

75g butter
345g brown sugar

Pudding

150g self-raising flour
pinch salt
90g butter
115g caster sugar
1 teaspoon natural vanilla extract
2 eggs
4 tablespoons milk

Method

  1. Cut pineapple slices in half to make 6–8 circles. Make butterscotch by creaming butter and sugar together.
  2. Spread over bottom and sides of a greased 1 litre pudding basin or charlotte mould. Arrange pineapple on top and decorate with cherries.
  3. Sift flour and salt. Cream butter with sugar and vanilla until light. Beat in eggs one at a time, then fold in milk alternately with flour. Spoon into basin. Cover with 2 thicknesses of pleated greased paper and steam for 1½ hours. Serve with cream or stirred custard.
