Sliced fruit such as apples, pears and bananas as well as whole berry fruit such as strawberries and boysenberries may be frittered. Keep apple, pear and pineapple slices about 1.2 cm thick; bananas may be cut in 3 diagonal slices. Apricots and plums may be halved and stoned.

Ingredients

oil, for deep-frying
370g fruit, prepared
1 quantity Sweet fritter batter
icing sugar, sifted

Method

  1. Heat oil in deep-fryer or saucepan to 185°C. Coat fruit with batter.
  2. Drop into hot oil, 3 or 4 pieces at a time, and fry until crisp and golden. Drain on crumpled paper towels. Sprinkle with icing sugar, if liked, and serve hot with whipped cream or a sauce like sabayon.
