Ingredients

750g green king prawns, shelled and de-veined
30g cornflour
150g self-raising flour
1/2 teaspoon salt
1/4 teaspoon freshly ground white pepper
310ml water
1 egg, beaten
oil, for frying
2 tablespoons honey
2 tablespoons sesame seeds

Method

  1. Dust prawns lightly with cornflour. Sift flour, salt and pepper into a bowl, make a well in centre and gradually add water and egg, mixing to a smooth batter free of lumps. Put 3 or 4 prawns in a bowl, pour over a small amount of batter to coat and remove. Repeat with remaining prawns.
  2. Heat oil in a large frying pan or wok, add prawns a few at a time and fry for 2 minutes or until prawns are golden and cooked through. Drain and keep warm. Remove oil from pan and wipe clean.
  3. Heat 1 tablespoon fresh oil in pan, add honey and stir over gentle heat until warm. Add prawns, toss quickly, remove and sprinkle with sesame seeds. Serve immediately.
